Since Chinese culinary masters are known for innovating multiple dishes from the same ingredient, Peking Duck, of course, isn’t an exception.  The most popular way to enjoy Peking Duck is served in two course - roasted duck pancakes and stir-fried duck in lettuce wraps.  

The roasted Peking Duck is traditionally served in front of diners; the chef will carve out the duck’s skin with a thin layer of meat attached, as part of a performance in front of diners.  Then, diners will wrap the duck with a special kind of white, floury pancake, along with fresh cucumber, green onions and a drizzle of hoisin sauce.

The second course is the famous lettuce wrap; the roasted duck’s remaining meat will be finely chopped and mixed with a special blend of aromatic, finely chopped vegetable.  After a quick stir-fry, the dish will be presented at the table, alongside with a stack of lettuce.  Diners will then consume this second course by adding the stir-fried mixture inside each pieces of lettuce.
